This puts a little different spin on potato salad. If you are a fan of my Twice Baked Potato Casserole
or the Twice Baked Stuffed Potatoes, you will really like this potato salad recipe! This is great for potlucks or cookouts. It is so good with grilled foods and those who might not normally like potato salad will more than likely like this one!
Here is what you will need:
6 baking size potatoes, baked
4 Tbs. butter
5 hard boiled eggs, peeled and diced
1 lb. bacon, cooked crisp and crumbled
1 bunch green onions, sliced thin including some of the green blades
2 cups shredded cheddar cheese
1 cup mayonnaise
1 cup sour cream
1/2 tsp. seasoned salt
1/4 tsp. celery salt
1/4 tsp. black pepper
When the baked potatoes are cool enough to handle, peel them and then dice in cubes. Place in a large mixing bowl. Add the butter. If the potatoes are still warm, it will melt on it's own. If they are not warm, melt the butter and then pour it over the potatoes.
Add the diced hard boiled eggs, half of the crumbled bacon, the green onions, 1 cup of the cheddar cheese, the mayonnaise, the sour cream and the seasonings. Lightly toss to mix it all. If you over mix it will mash the potatoes, so gently is the key.
Sprinkle the top with the other cup of cheese and the rest of the bacon. I like to sprinkle a little of the green onion on top for color also.
Serve immediately! I like this served at room temperature or even a little warm, but it's good after it's chilled also!
