The Elvis Presley Cake!


Elvis Presley had a reputation for loving good southern cooking, like most southern men do.  I don't know if this cake got it's name because it was a cake his cook, who he employed for years, made for him or not.  However, it does seem like a cake Elvis would have probably liked.   Regardless of how it got it's name, it's a dang good cake and so easy!  

 Here is what you will need:

1 box white cake mix (plus the ingredients called for to make it)
1 8 oz. can of crushed pineapple
1 cup sugar
1 8 oz. package cream cheese, softened
1/2 cup butter, softened
4 cups confectioners sugar
1 tsp. vanilla
1 cup chopped pecans



Bake the cake according to the package directions.   Remove from oven and poke holes in the top of the cake with a pick or a meat fork works well.



Place the pineapple with it's juice (don't drain) and the 1 cup sugar in a sauce pan over medium heat and bring to a boil.   Pour evenly over the cake.   Allow to cool. 

Beat the cream cheese and butter together until fluffy.  Add the confectioners sugar and vanilla until smooth.  Stir in the chopped pecans. 

  

Spread over the top of the cake.  You can serve immediately.  Refrigerate the leftovers.

  3. How sweet is it? because I'm thinking the sugar in with the pineapple would make it really really sweet I could be wrong though :)

  4. Haven't tried it yet, but curious. What is the point of buying the ingredients needed to make the cake mix? Or did I misinterpret what it said? Thanguverymuch.

    1. Yep...you need eggs, water and oil "usually" to make a cake! :)

    2. It states to bake the cake according to directions on the box, which tells you to use eggs, oil, and water.

  12. Made this last week. Forgot to mix pineapple with the sugar and boil. Just put the plain pineapple on the hot cake then iced. It was still good! Got a great review from my SIL. Going to make again tomorrow and try it according to directions.

    1. Yep, not sure if Elvis ever ate this or not. Don't know how he felt about pineapple, but I know he LOVED bananas and also peanut butter.
