Old Fashioned Potato Candy!



If you have never had this "Old Fashioned Potato Candy", you have really missed out.  It's called potato candy, because it's made with mashed potatoes.  Makes sense doesn't it?  It might sound weird if you have never tried it, but believe me, it works.   We make another version of this with cream cheese also, but you can hardly tell the difference.  I am sure when this was originally made, they didn't have the availability of cream cheese like we do today. The starch in the potatoes is what makes this work.  It doesn't taste at all like potatoes though. 

 Here is what you will need for this:

1/4 cup mashed potatoes
2 Tbs. butter, room temperature (no substitutions)
2 Tbs. milk
1 tsp. vanilla
pinch of salt
1lb. confectioner's sugar
1/3 cup peanut butter

Combine mashed potatoes, butter, milk, vanilla and salt.

Gradually mix in the powdered sugar until a dough forms.  Chill the dough for 1 hour.

Sprinkle about 1 Tbs. confectioners sugar onto wax paper or a large cutting board and roll the dough out into a large rectangle.

Spread the peanut butter out in a thin layer to cover all of the dough.  This might take just a bit more than 1/3 cup depending on how large your rolled your rectangle.

Roll it up like you would a jelly roll.  Wrap it up tight in plastic wrap and chill in the refrigerator at least 2 hours before slicing into pieces to serve.   Keep in an airtight container and in the refrigerator when not serving to keep it from drying out.


This is really pretty on candy or dessert trays!

  1. your recipe is almost identical to the one I have been making for 50 years. It is still the one thing I MUST make for my family-6 lbs. of it. I eat 2 pieces after making it for days I really don't need to eat it. But there never seems to be enough to satisfy my family and friends.

  2. Very interesting, my Mom made it with conf. sugar & egg white. Called it peanut butter candy. Yum!

  3. My grandmother and mother got a recipe for potato candy from a county extension agent in new mexico during the depression. It called for a medium sized potato boiled and peeled and then mixed with powdered sugar. Was definitely a family favorite.

    1. You just need to add more confectioner's sugar until it's stiffer. Then be sure to chill until it's really cold. There is no reason it won't roll if you do that.

  8. When do you put the vanilla in? I just made the dough and realized after I had put it in the fridge to cool that I had forgotten to use the vanilla. Looked at the recipe again and saw that you had it in the ingredients but not in the directions. I assume it was supposed to be in with the potatoes, butter, milk and salt. Hopefully it will still taste just as good when it's all done! (Actually the dough tasted pretty good without it!) I enjoy all your recipes and have made several. Thanks!

  9. Are the potatoes cooked and smashed or are they just flakes? My mother use to make this at Christmas and missed it every Christmas since she passed.

  10. My Mother made this for us 60 years ago! We still make it for Christmas. We boil a medium potato and mash well with a fork. Sift powdered sugar and add to the potato till a dough forms. No milk or vanilla or butter! Roll out thin and spread peanut butter and jelly roll it up. Then cut in bite-size pieces. Snow white dough! yummy!
