Mama's Pimento Cheese!



My mother makes the best pimento cheese ever.  Now, I know we all think our mothers or grandmothers or whatever made the best this or that and to us they did or still do.  Sometimes we think this because they introduced us to these certain foods or because of the love that went into making these foods.  However, sometimes, it's really because they make it better than everyone else.  I think that is the case with this pimento cheese recipe. I just never like any better than this. 

 Here is what you will need for this:

Ingredients:

5 cups grated American Cheese
1 cup Miracle Whip (can use mayonnaise if you prefer)
2 tsp. sugar
2 tsp. Worcestershire sauce
1/4 cup chopped pimento

Mix the first 4 ingredients well and stir the pimento in last. This is one of two recipes Mama uses Miracle Whip in instead of mayonnaise and according to her, it's part of the secret to the taste.  I have tried making it with mayonnaise and she is right, it's not as good for some reason.   If you are one of the mayonnaise only types, who gets a little crazy about it, use mayonnaise.   Chill before serving.

    1. I don't think Velveeta would work. It's too soft, number 1, and number 2 it's NOT really cheese.

    5. Yes you can. I'm from Kentucky and thats how I was taught to make it.its just creamier. You could add some grated cheese for texture. We don't use Worcester sauce but add just a bit of sugar. And a big Yes on Miracle Whip.

  4. I always use Miracle Whip and I add chopped up sweet pickles. No Worcestershire sauce but add about a tablespoon of sugar. Mix well and chill before serving.

    2. It's better to grate it yourself. The pre-grated stuff is tossed with something (corn starch maybe?) to keep it from clumping up.

  13. Being from northern BC, Canada, I have never tasted this? honestly, is it good, do you eat it by its self or put it on a burger or something?

      My grandmother always spread some Pimento cheese inside celery stalks for her relish tray. Cut celery stalk in lengths that are
      easy to handle.

  15. I would love to use make this I love pimento cheese, but it won't taste as good without miracle whip I not to sure, last year I would of rushed out and got everything, but they changed the formula of the miracle sweet it tastes sweeter now and I don't like that new taste.

  18. I love Pimento Cheese have had it all my life seeing we are from Texas. But I have always used Mayo and Grated Chedder Cheese in mine. It is just whatever you grew up on. I even Grate my own Cheese....

    1. I agree, altho I sometimes use finely grated mild cheddar in mine. I use a lot more mayonnaise & pimentos than most recipes call for & also no salt, since cheese & mayonnaise are both salty.

    2. I have used Miracle Whip for years, but am trying to use fewer foods that have high fructose corn syrup - so mayo it is, but it has to be Duke's! My husband's aunt put marshmallows (chopped up) in hers and it was delicious! I use pickle relish, maybe some onion, occasionally some chopped pecans, plus the pimentos, and I like to grate my own cheese. It's just better than the pre-grated. Mama always used sharp cheddar, but I like to combine that with Colby. Shoot, I'm going to have to make some tomorrow! :-)

  20. You can get American cheese in chunks in the deli usually. 5 cups grated should be about 10 oz.

    America's Test Kitchen said that the secret ingredient was a little bit of the vinegar from pickle relish. I'll give it a shot next time.

  21. My sister in law makes great pimento cheese.....she uses half grated velveeta and half grated cheddar, pimentos and miracle whip. Yummy.

  22. I use Velveeta, pimentos with their juice, and Kraft Mayo, whip it really good with my mixer, then stir in cheddar cheese and grade Parmesan. My family and friends love it. My kids love it with Frito scoops!

  24. I use mayonnaise and add a little apple cider vinegar to the recipe......gives it the tang it needs. Otherwise, my recipe is the same as yours.

  26. Do you use deli cheese and put through a meat grinder to make this? I just don't like the packaged shredded cheese bought in stores.

    1. If you can buy it by the block, buy that and grate it yourself. If they don't have it like that in your area, buy a piece, unsliced in the deli and grate it.
