This is one of those pies that you just have to make and once you do make it, you will be asked to make it every time someone has something and needs a dessert. You won't mind making it though, because it's surprisingly easy. You don't even have to turn on the oven and the recipe makes two pies...one to take to a friend's and one to leave at home! These freeze great also so it's great to freeze one to have on hand for when company pops in unexpected. Here is what you will need:
2 cups rough chopped pecans
2 cups flaked coconut
1/2 cup butter (1 stick)
1 (8 oz.) cream cheese softened
1 (14 oz.) can sweetened condensed milk
1 (16 oz.) frozen whipped topping
1 jar caramel ice cream topping
2 graham cracker pie crusts
In a skillet lightly brown the pecans and coconut in the butter. Set aside to cool.
With an electric mixer blend the cream cheese, sweetened condensed milk and whipped topping
.
Divide evenly between the two pie crust
Top each with half of the pecan and coconut mixture. Drizzle the entire jar of caramel ice cream topping over the tops of both pies.
Refrigerate or freeze for at least 3 - 4 hours. I think they cut best if you freeze them.

ReplyDeleteThis is a delicious, delicious pie. I changed one thing....I put 1/2 of the nuts and coconut in the pie filling and used the other 1/2 evenly distributed on the two pies. Too much for the top but GREAT in the pie.

ReplyDeleteI actually like the coconut/nut topping on the top because it stays crunchier. If you mix it in or layer it, it changes the texture of the nuts and coconut. It's all in what you like I guess, but I would try it as written in the recipe first. I just don't think it needs any changes.
DeleteI make this pie,Did not know name,I just called it frozen pie..I divide my filling a layer in each crust, then add half coconut, pecans and caramel..Then add another layer of filling with coconut,pecans and caramel on top..Very good...
ReplyDeleteI've made this for years and like Gloria Bowden, I make two layers of filling, etc. for each pie. It's so good that way. Also, you are not freezing the pie just because it cuts better that way. It is usually served frozen. I can't eat it any other way. You will have died and gone to heaven when you taste it frozen. The texture is of the finest ice cream you can imagine. Actually, Died And Gone To Heaven would be the perfect name for it frozen.

Now comes the confession. :(
When my husband came home from work that day, I immediately cut a slice for him. I sent a slice to the neighbor, and I cut a tiny slice for myself. This totaled 1/4 of one pie.
Are you getting an idea of where this is going? I have NEVER been one to pass most chocolate. (My students know my chocolate addiction is so bad that they tease that I would shoot it into my veins if it were possible and game the same effect.) Anyway, during that evening - night - early morning hours before daylight, (I don't sleep well)I would get another "tiny" piece of that pie.
When my husband came home the next day he was ready for another piece. I acted busy getting ready for dinner and sort of ignored him. He went to get the pie from the freezer on his own. He came back and asked where I had stored the 2nd one. Again, I was REALLY BUSY washing dishes, so I couldn't answer at the time. 0_0
I didn't put chocolate on the 2nd one, and he decided it needed chocolate. NO PROBLEM. I melted more and put it on the pie. He was starting to catch on to what happened to the first pie, so he had another piece before the night was over.
I will now admit that I finished off the second pie by the morning of the third day (and it was hard to make it last that long.) I ate ALL BUT 4 PIECES OF THOSE TWO PIES!!!!! You might think I must weigh 500 pounds if I do things like this often. Nope. I fluctuate between a size 8 and 10. I don't like other foods... I could live without french fries, bread, chips,kayo, ketchup, fried foods, and all that other "healthy" food. I do like vegetables and meat, but I don't eat much.
I had to make this confession because I just made two more pies (at his request.) I am determined to stay away from them. I am hoping that making this confession will keep me accountable even though none of you are here to watch me.
I honestly can't think of another pie that I like as much as this pie. I pinned it, printed it, wrote it in my special recipe cookbook, and emailed it to myself and both of my daughters just in the off chance that I misplace the recipe.
That being said, I hope I have made some of you feel good about yourself because you had a bite or piece of that pie. Hey! At least you aren't as big of a pig as that lady who ate 1 and 1/2 of those pies in less than 60 hours. Maybe I even made a few of you smile or chuckle.
If you haven't made this recipe yet, I suggest you get at it as soon as you can. If something happened and they stopped making some of the ingredients (like the total extinction of Twinkies) you will be sooooo sorry you didn't get to it.

ReplyDeleteThis is the BEST and EASIEST recipe ever. And it is a HIT wherever you take it - even if you just keep it for yourself. We keep it in the freezer and just set a piece out to soften before dinner. I cannot rave enough about this Sweet Tea and Cornbread. LOVE IT! LOVE THIS SITE!

ReplyDeleteI have my coconut and pecans cooling now. Am bringing one of these fabulous looking pies to my sister -in-law's for Christmas dessert, the other I will keep hehe. Her hubby doesn't like graham so I bought 2 shortbread crumb crusts.....and I made my own homemade caramel sauce! The only thing I wish I had done was make homemade whipped cream but I was up til 2:30 this morning baking other goodies and was just too tired. I am just not a fan of Cool Whip with the high fructose corn syrup and artificial flavors etc but I figure once in a while it's okay and the crust is not homemade either so I will just deal with it. I am sure it will taste amazing, I can't wait to eat it! Thank you so much for this wonderful recipe!
ReplyDeleteI just went to the store and bought all the ingredients for this recipe. I am thinking of folding in some ribbons of caramel into the filling too. Has anyone tried that yet? I also got some fudge to drizzle on top with the caramel. This looks so amazing! I am making this for my father in laws birthday but I am pretty sure that I will "quite by accident" leave one behind on my own kitchen counter. Thank you for sharing.
