Fresh Strawberry Pie!


Every spring when strawberries first start to come in around here, this is what my husband gets a craving for.  He is a strawberry nut!  It must be genetic.  His grandfather was a strawberry grower and organized the Strawberry Grower's Association in Kentucky many, many years ago, when strawberries must have been a much bigger crop for Kentucky. Now, most strawberries grown in the United States commercially, are grown in California and Florida.   However, there are still plenty grown in Kentucky that are sold locally in supermarkets and at farmer's markets or on a "you pick yourself" basis.  They are pretty much the best strawberries you can buy also.  Anytime you can buy produce that fresh, locally, it is going to be better.
This pie was not made with Kentucky strawberries, because we have to wait a few more months for those, but these were some very good berries and they were nice and big.   This strawberry pie is probably the easiest pie anyone could make and you do not need to buy that bag of goop in the produce section of the grocery by the strawberries. 

 Here is what you need:
1 9" pie shell, baked and cooled
1 quart strawberries, washed and capped (you can leave them whole or slice them, whatever you prefer)
1 cup sugar
1 cup water
3 Tbs. cornstarch
1 (3oz.) box of strawberry gelatin (Jello)
In a saucepan over medium heat, mix the sugar, water and cornstarch.  Stir until it just boils and turns clear and thickens.   Add the strawberry gelatin to the mixture and cook for about a minute stirring constantly and making sure it's smooth.  Remove from heat and allow to cool.
Arrange the strawberries in the baked and cooled pie shell. You might need to sort of pile them up in the shell. 

  Carefully pour the gelatin mixture over the entire pie. Try not to let it spill over the sides, like I sort of did here.  Place in the refrigerator and chill for at least 2 to 3 hours. 


Slice and serve with whipped cream!

  3. We have pictures of my husbands grandfather with piles of wood cases of strawberries in Ohio County Kentucky. The family was selling in a road side stand and had a load ready to go to market. It was probably in the 1930's. I have this same recipe for Strawberry Pie. I wouldn't even try to use another one. My favorite Home Economics teacher from High School gave us this recipe. Thanks for all the great recipes.

  7. I also make this same glaze with peach jello and port it over fresh peaches then chill it couple of hours and you have a wonderful fresh peach pie that is delicious.

  8. I just made this pie for the first time and it came out beautiful. I used half a cup of sugar and sugar free gelatin, and it worked out well. I sliced the strawberries small and put half in pie crust,spooned some glaze all over. added the rest of the strawberries and glaze. it looks like my pie should be as the picture !! LOL thank you for this yummy recipe. I shared it on my facebook page,, and sent it to my sister in law who went to the strawberry festival in plant city ,Fl, and came back with a case of fresh strawberries !!

  14. My Mom always sprinkled the crust with powdered sugar before putting in the filling. This helps keep the crust from getting soggy. :)

  16. I love this pie! It's my favorite although the last few times I made it we had to eat it with a spoon. The filling always gets good and thick. Then after we put it over the strawberries, it get starts to get thin again
    Any ideas?

    1. Make sure you are bringing your cornstarch mixture to a boil and thickening it first, then adding the gelatin. Make sure your pie shell is cooled and the gelatin mixture has cooled before assembling your pie. Make sure you chill the pie for 2-3 hours before you serve. Overnight is actually even better. It should not be runny at all if you do all of this. Use a good brand of gelatin also.

  18. This is the exact recipe I've used for years (passed down in our family, for several generations), and it's amazing. We also will substitute flour for cornstarch (check your conversion amounts) when we want a slightly different taste. The filling will be cloudy, but it's still delicious both ways!!

It is a huge hit and with all these big, beautiful Florida Strawberries just begging to be picked and eaten, I'll be making several more this summer I'm sure. btw...someone asked the question about using Graham Cracker Crust...yes, actually, use the Chocolate Crust...Strawberry-Chocolate Pie. OH YUM!! And yes, the Peach is just as good!!~ Paula Patrick

  20. Made your fresh strawberry pie today and shared it, topped with Cool Whip, with four neighbors in the apartment complex where I live. We all loved it! Like Anonymous above, I'm thinking of trying it with other fruits and, of course, a chocolate crust.

  21. I have this same recipe..Its always a 'HIT'..I Would never use any another recipe..Its always a 'MUST' at holiday meals.. We have to make 2 so my grandson can take one home, he wants a whole pie he dosent have to share...lol
