Red Wine Cake!

This "Red Wine Cake" is a really delicious cake that isn't all that hard to make , but just seems special when you do make it for someone.  It's just a little different and it's not overly sweet or rich for those who don't care for really sweet desserts.

My sister got this recipe from a neighbor of hers when she lived in northern Ohio.  Her neighbor was from Germany and was an excellent cook and baker and was always cooking up something really good.   This makes a good cake for holidays also, like Christmas and Valentine's Day because of the reddish hue it has.   Here is what you will need:

1 cup butter, softened (2 sticks)
1  1/4 cups sugar
5 egg yolks
2  1/2 cups all purpose flour
2 tsp. baking powder
1 tsp. vanilla
5 tsp. Nestle Quick chocolate mix
1/2 tsp. ground cloves
1/2 tsp. cinnamon
1 cup chocolate sprinkles
2/3 cup red wine (any kind works)
5 egg whites, beaten to soft peaks
confectioners sugar for garnish

Preheat oven to 250.

Cream butter and sugar together.  Add the egg yolks one at a time.  Mix in all of the other ingredients except the egg whites just until well incorporated.  Don't over mix.  Gently fold in the whipped egg whites.

Spray a spring form pan with baker's nonstick spray. You can also use a Budnt pan.  Pour cake batter in and spread evenly.  Bake for 1  1/2 hours.  Cool in pan.  Remove sides of pan and sprinkle with confectioners sugar.

  1. Lay a heart shaped paper doily on top before sprinkling the powdered sugar would make a pretty design for Valentine's Day.

  2. Looks great! Do you think I could use a regular cake pan?

  3. You could use a 10 inch cake pan, probably.

  5. What can I substitute Nestles Quik with? Can I use regular cocoa powder? I don't keep Nestle's Quik handy (no children in the house anymore). Or can I use Nestle's choco bake and increase the sugar in the recipe?

    Thanks so much.
