This is one of those "salads" that is really almost a light dessert, but however you serve it, it's really delicious. I am not a person who is really crazy about the congealed, creamy, fruity salads, but this one is one of my favorites. If you are one of those folks who doesn't care for buttermilk, don't worry, you will never know this has buttermilk in it when it's all mixed together. Here is what you need for this "Orange Buttermilk Salad":
1 8 oz. can of crushed pineapple in syrup
1 5 oz. box of orange flavored Jello gelatin
2 cups buttermilk
1 8 oz. container of whipped topping, thawed
1 (11oz.) can mandarin oranges, drained
1 cup chopped pecans or walnuts
Place pineapple with it's juice in the microwave and cook until it boils...about 2 to 2 1/2 minutes in most microwaves. Pour orange gelatin in and mix. Let this cool to room temperature. Whisk in the buttermilk. Fold in the whipped topping, mandarin orange segments and the nuts. You can pour this into an 8 cup mold or in a pretty glass serving bowl. Cover and chill for at least 4 hours or overnight is best.
This basic recipe can be easily altered by to make different flavors. For example by using cherry gelatin and a cup of chopped maraschino cherries, you can change this to a Cherry Buttermilk Salad.

ReplyDeleteMy mom used to make this for church suppers and I haven't had it in years! She didn't add buttermilk to it and maybe she should have - I always WANTED to like hers, but just could get there. I think I will make this as a surprise for her this weekend. She will love it!

ReplyDeleteI would imagine you could substitute pineapple in juice, instead of syrup, substitute sugar free gelatin for regular and also fat free topping instead of the regular topping. Would make this just about guilt free!

DeleteI use sour cream instead of buttermilk. My husband wouldn't eat it if he knew it had sour cream in it; but like the buttermilk, you don't taste it. :)

ReplyDeleteMade it,love it! I think it taste like the one with cottage cheese, just smooth. I used a larger can of pineapple in its juice and 2 cans of the oranges and left off the pecans. My husband loved it also and it didn't last long. The next one i make will be with the sugar free gelatin and I am thinking about chopping up a bananna and maybe a little coconut.

ReplyDeleteI make this with pasticcio jello and walnuts but still use mandarin oranges. My family loves it! I have also used fruit cocktail and it is just as delicious. I think any variation will work.

I have made this for years, but used cottage cheese instead of buttermilk. I am not a fan of cottage cheese, but, as you said of the buttermilk, you could not taste it. I am glad to hear you can use buttermilk as I did not like the texture of the cottage cheese. Thank you for your posts and all your recipes. I truly enjoy them!
