This Asian Slaw is a really good alternative to regular coleslaw and comes together so fast and easy using the coleslaw mix from your produce section. You also use Ramen noodles in this which give it a nice crunch and flavor. It's really good with pork or chicken dishes.

1 pkg. coleslaw mix
1/2 cup sliced green onions, including some of the green blades
1 cup sunflower seeds
2 pkgs. Ramen chicken flavored noodles (use the seasoning packets for the dressing)
1 cup oil
2 tsp. soy sauce
3/4 cups sugar
1/2 cup apple cider vinegar
pinch of red pepper flakes (optional)
Place the slaw mix in a large bowl. Add the sliced green onion, and sunflower seeds. Remove the Ramen noodles from the bag, crush them up and add. Set the seasoning packets aside.
I know someone is going to ask what Ramen Noodles are, so here they are. They can be found on the soup aisle of your grocery.

ReplyDeleteThis is my go to salad for potlucks. I've never tried sunflower seeds in it. Sounds good. I also like to toast my ramen noodles a little.

ReplyDeleteThey soften - you gotta eat this at one meal. OR put these on the side - and add to individual portions. Or just make it and add noodles to half the mixture for that day and half for the next day. Incredible!! We brown/toast the noodles and seeds. And we often add sliced almonds.

ReplyDeleteI have made this for years. I toast sesame seeds and slivered almonds, instead of using the sunflower seeds, although they sound good, too. I have used all kinds of Ramen Noodle flavors, but the Oriental is my favorite!!

ReplyDeleteThe other thing you could do is add the ramen right before it is served, that way they don't get soggy or softened.

ReplyDeleteThe recipe that was given to me has you browning the noodles with 1 stick of butter 1-2 c chopped pecans or 1 pkg of slivered almonds, 1/2 jar of sesame seeds.
ReplyDeleteI have made this but instead of sunflower seeds I used slivered almonds and I also browned the noodles in a pan w a pat of butter. It's so yummy.

ReplyDeleteI have always used Almonds in mine and also you can put cut up cooked chicken right in the slaw mix. Really good both ways.

ReplyDeleteGreat salad and if you use olive or canola oil and decrease it to `1/2 cup, you won't notice the difference. Let it sit for a bit and stir more...also the oriental noodles and season pack are the best!
ReplyDeleteTry substituting, sometimes, slivered almonds instead of sunflower seeds and sauteing them lightly browned along with the crushed noodles in a tablespoon of butter/olive oil. Pretty awesome!
ReplyDeleteI make this but do not use the flavor packet for the dressing (too much sodium) and I use Napa Cabbage instead of slaw mix. YUMMO!
ReplyDeleteYou can also add mandarin oranges to this and make it with shrimp. Tried it many ways and always love it. It's great with the mediterranean diet. We always use olive oil with ours. Thanks for sharing this. It's so good. If you sre vegan, it's very good meat free. Just love your site
ReplyDeleteThe recipe I have says to toast the noodles and also toasted almonds instead of sunflower seeds. Just a different recipe, and I am sure your recipe is delicious. It is even better the 2nd or 3rd day (if it lasts that long).

ReplyDeleteI never put the noodles and nuts in the slaw they get soggy. I put them in a small bowl on the side and let the person put their own on.much better. Also good using the broccoli Cole slaw mix.

ReplyDeleteI pretty much make this at least once a week now. So delicious, so fresh... I actually prefer the noodles when they absorb the dressing. I usually make it at least 12 hours prior to serving and the flavors blend perfectly.
ReplyDeleteI have made this salad before and I toast my ramen noodles in a fry pan to make them more crunchy and I don't add them until its time to serve the salad,the same thing with the sunflower or other seeds,roast them in a pan for a bit.
ReplyDeleteI cook several chicken breasts and cut into cubes to add to this. I also use slivered almonds instead of the sunflower seeds.
