This fudge is the absolute easiest fudge I have ever made and I just don't think there is any way to mess it up. There is no boiling, no candy thermometer, no soft ball stage...nothing. The combination of peanut butter and chocolate reminds me of those "no bake" chocolate peanut butter oatmeal cookies we made about `100 years ago in Home Economics class or if you are younger than that, the ones your mother or grandmother made in Home Ec 100 years ago. I love those cookies though and I still make them occasionally. Here is all you will need and you won't believe it:
2 sticks butter
1 1/4 cups peanut butter (I used the chunky kind)
3 Tbs. powdered cocoa
dash of salt
1 tsp. vanilla
1 tsp. light corn syrup
3 cups powdered sugar, sifted
In a large saucepan, melt butter. Add in peanut butter, cocoa, salt, vanilla and corn syrup and blend well. Remove from heat and stir in the sifted powdered sugar. Mix until it is all incorporated.
Butter an 8"x8" pan and spread the mixture and pat it down smooth. Refrigerate for a couple of hours and then cut in 1 inch pieces with a sharp knife. Store in an airtight container.

ReplyDeleteI have been making the marshmellow cream fudge for years now with lots of luck. I add a cup of peanut butter sometimes. I can't wait to give this recipe a try. It sounds wonderful and easy. Oh, about those old fashioned no bake cookies. I have justed recently remembered them and have made a couple of batches. Still yummy.
ReplyDeletePress mixture into mini-muffin liners for a very "neat" and individualized presentation. Fill 3/4 of the way up - chill in fridge. Can even be wrapped with colorful plastic wrap for small "love" gifts!!

ReplyDeleteHi Kathy, have you ever come across a no-bake recipe that uses Chocolate and cereal. I think it uses Bran cereal. I want try and make it with dark chocolate and I am going to try to make your fudge recipe with dark chocolate too. Or even the new Chocolate peanut butter~ I just hope it comes in chunky~~If not, I'll just have to stir in some pecans off my trees~ MMMM

Annette, bless your heart, I am so sorry about the loss of your daughter. No one should have to outlive their children, but God's will is not always understandable at the time. I am so glad you are enjoying what I post and if it helps just one person, it was worth it. I do think God has lead me to do this, and it's successful only because of His blessings. Savage, it's unsweetened cocoa powder used for cooking...something like Hershey's. It's in a can like the Nestlé's but it's on the baking aisle. Do not use Nestle Quik, that's not it.
ReplyDeleteIt's best to sift he powdered sugar in this to make I smoother, but you could get away without doing it.
ReplyDeleteOR use a fork & stir stir stir in the powdered sugar & its almost like sifting it!
