This salad recipe is one that my mother always made and served when she had a restaurant. It was always very popular and surprisingly the men who ate there really loved it. Men and salads don't always click for some reason.
This is a great salad to make for a crowd or to take to a potluck, because it makes a lot and you can make it the night before. Actually it's best made at least a few hours ahead of time. This is a good salad to serve alongside any type of food, but it's surprisingly good with Italian food like lasagna or spaghetti. It's also a good salad for the fall and winter months because the ingredients are not seasonal and are good all year round in the grocery. Here is what you will need for this:
1/2 head of iceberg lettuce, torn in bite size pieces
1 large head of cauliflower, broken into bite size florets
1 medium green pepper, cut in rings
1 medium onion cut in rings ( a purple onion is really pretty for this)
1/2 lb bacon, fried crisp and crumbled
1/4 cup grated Parmesan cheese
1 cup mayonnaise
3 Tbs. sugar
1 Tbs. apple cider vinegar
In a large glass salad bowl or even a trifle dish works well for this, place the torn lettuce in the bottom. Add the cauliflower. Mix the mayonnaise, sugar, and vinegar together. Spread over the cauliflower and lettuce. Sprinkle the Parmesan over that. Add the onion and green pepper rings. Finish with the crumbled bacon. Chill for 2 to 4 hours. Toss just before serving.

ReplyDeleteIt is awesome!! We've never put the green pepper or apple vinegar in it, but all the other ingredients are used. It's best if made about 24 hrs ahead of time and will only last a couple of days, due to the lettuce wilting.
DeleteThink it's better to dice up the green pepper and onion rather than having it cut into rings.

ReplyDeleteI make the same recipe but omit the lettuce, sugar and mayo and add a bottle of ranch dressing. I also chopped everything in small pieces. It is delicious and my kids love it.

ReplyDeleteYum! I made this tonight to go with our BBQ burgers and dogs. It was delicious and everyone loved it. What a fun change of pace from potato and pasta salad. I will definitely make it again. My only recommendation would be to cut the peppers and red onion into bite size chunks instead of rings. Makes it easier to toss, too.

ReplyDeleteI used spinach and romaine lettuce and used more than the recipe required because there was enough dressing to make a larger salad to serve the 18 that was at my house for brunch. It was absolutely delicious and everybody loved it. Served in a trifle dish....it was beautiful and resembled a 7 layer salad.
DeleteI've made this salad about ten differant ways (adding peas or corn and cherry tomatoes cut in halfs)but, each time it's just wonderful as the last. One thing I do that makes it even better is mixing the parmesan and mayonnaise (H.mayonnaise w/olive oil is great)together and yes chopping the red onion along with the green pepper is much much better. Then top with 8 to 10 slices.......No, go ahead and use the whole package of pepper or hickory smoke bacon.
