This is another family favorite that we have been making for years. This is a good potato dish for company or big family dinners, because it can be prepared the night before and it serves a lot of people. This is also good for both a big breakfast and as a dinner side.
Here is what you will need:
1 2 lb. package of southern style hash browns, the diced variety, thawed (you can use the shredded variety if you prefer)
2 cups shredded cheddar cheese
1 stick of butter, melted
1 can cream of chicken soup
16 oz. sour cream
1/2 c finely diced onion
1/2 tsp. seasoned salt
1/2 tsp. pepper
Topping
1/2 stick of butter, melted
2 cups crushed cornflakes
In a large mixing bowl, mix all of the casserole ingredients until well blended. Pour and spread evenly into a 2 1/2 quart casserole dish sprayed with nonstick cooking spray. Mix the other 1/2 stick of butter and the cornflake crumbs and sprinkle over the top. Bake in a preheated 350 degree oven for 1 hour until hot and bubbly.
I have turned this into more of a main dish by stirring in 2 cups of chopped ham and 1/2 cup milk. Just add a vegetable and/or salad and bread and you have dinner. If you don't have a big family or company to feed, this casserole can be divided into two smaller ones and one can be frozen for another meal. I freeze before I bake it and then just take it out for another time.

DeleteYou can also use a sleeve of ritz or town house crackers crushed on top.
DeleteWe use cream of mushroom soup and top it with crushed plain potato chips. YUM!
ReplyDeleteLove it!!! This recipe was going around in the early 80's when I was raising my 3 small children & I took this to every pot luck event. When I would ask my oldest son what he wanted from me for a Christmas gift every year after he turned 18 & left home ..lol ...he would always reply " your potato casserole - put in a 9x13 pan,cover with tin foil, add a pretty red bow on top & place a gift tag to me " (he didn't want to share ) haha & then when he got engaged he brought his fiancee over & told her to listen up as I recited the recipe to her....lol ....& now they are the ones who bring it to every family event . So this is a very good recipe.... Kids of all ages just love it....sometimes I add green onions with the tops ( sort of like chives ) for the baked potato flavor in a casserole &I've also added real bacon bits. I make it the same as listed here but I always add 1 can cream of chicken & 1 can cream of mushroom ....but can also variate with cream of celery or french onion

ReplyDeleteMy husband doesn't like cornflakes on top and my daughter in law cannot have corn products, so I just leave off the topping on about half of it for them and it's just as good w/out it...I have used this same recipe for years....always good. Great w/hamburgers and hotdogs for a cookout, too.

ReplyDeleteI have used this recipe for years now and it is still my daughter's favorite and now her children as well. I, as did some of you, also added 2 cans of soup.....one cream of chicken and one of the cream of mushroom. However one thing that my recipe called for and wasn't mentioned here, was instead of chips, cereal, crunchy onions etc......was Croutons. My recipe called for a stick of butter melted in a sauce pan, and then add to that a box of Croutons, and I always used the herb seasoned. Stir until the Croutons absorb all the butter and then spread over the casserole and bake. It too was a favorite at the church pot lucks!!!!
ReplyDeleteI make mine the same exact way except for the topping I crush two sleeves of ritz cracker and mix with two sticks of melted butter and spread on top. YUMMY!

ReplyDeleteI chopped up Bacon and fried til it was crisp and added it to mixture...then used ritz crackers for the topping....it was DELICIOUS and a huge hit with my family!!! Love this recipe.

ReplyDeleteI got this recipe from my mother in law, and have changed it around just a little. Just like the writer, to make it a "meal", we add ham chunks, and some vegetable, either squash slices, zucchini slices or asparagus, add mushrooms, and rather than the topping listed, we add french fried onions, my husband loves the cheddar cheese ones! Delicious. Took it to a church social last week, and came home with a completely scraped out 9x12 inch pan, and there was A LOT OF FOOD THERE!!!!
