Salmon patties are an old southern favorite. They are economical and really very easy to make, but I don't think a lot of people make them much anymore. For those who like them, they are very popular though. There is a little restaurant near us that has a couple of daily specials and during Lent their Friday specials are salmon patties or fried catfish. Surprisingly, they usually run out of the salmon patties early. My husband loves salmon patties. He could eat them once a week I am sure. He was quite happy that a "Sweet Tea and Cornbread" reader wanted a recipe for them. This is the recipe my mother has used for years and taught me a long time ago.
Here is what you will need for these:
1 15oz. can salmon (I prefer the pink salmon)
2 eggs, beaten
1 cup crushed cracker crumbs
2 Tbs cornmeal
1/2 tsp. seasoned salt
dash of pepper
oil for frying (Canola or vegetable oil)
Open the can of salmon and drain the liquid off of it. Pour the salmon in a bowl and pick through it and remove the skin and any bones you see. Some people just mix all of the skin and the little soft bones into the patties, but I prefer not to do that.
Shape into uniform size patties about 1/2 inch thick. The mixture should stick together well. Pour enough oil in a pan to cover the bottom and heat to medium. Place the salmon in the pan. Fry on each side until golden brown. Remove to a paper towel lined plate.

DeleteInstead of cracker crumbs I use 2 or 3 tablespoons of leftover mashed potatoes and 1 egg and finely chopped onions and salt and pepper to your taste. Then I make the patties and then roll them in cornmeal. I put them in the refrigerator to chill 2 to 4 hours. Roll in cornmeal again if necessary, then fry. Chilling them helps them to stay together better,I think

My Granny used pink salmon, everything in the can (double Q only), 2 eggs, s&p, self-rising flour (enough to bind) She then spooned heaped spoonfuls into a skillet of hot grease, brown both sides and they were done. Oh how I miss her! (I remove the skin and bones when I make mine for my hubby, but I do miss the crunch of hers I had as a child!)

One of their Friday specials was fried salmon patties served with English peas in white sauce. Soooooo good!!!! I've always made them at home; however, instead of cracker crumbs I now use Panko crumbs.

ReplyDeleteLOVE Salmon Patties!!! Have them fairly often. I don't put cornmeal in mine and use bread crumbs instead of cracker crumbs. Also, try putting a little old bay seasoning in (not too much) and onion powder. Wow, one of my FAVORTITES with Mashed Potatoes, Cream Corn, and Corn Bread!

ReplyDelete1- 16oz. can salmon
1 egg
1/3 c. minced onion
1/2 c. flour
1 1/2 tsp. baking powder
1 1/2 c. Crisco
2 Tbsp reserved juice from salmon
Drain and debone salmon, reserving th 2 Tbsp. juice. In a medium mixing bowl, mix salmon, egg, and onion until sticky. Stir in flour. Add baking powder to reserved juice. Stir into salmon mixture. Form into small patties and fry until golden brown (about 5 minutes) in hot Crisco.
This is almost the way my mother made them, I use bisquick in mine and they turn out very good...I have never had them made with cracker crumbs.

Delete@Dawn: I use flour in my recipe, too, and add a little mustard when mixing all incredients. Gives it a very good flavor and is one of my husband's favorite meals served with grits and biscuits!
DeleteI don't use cornmeal, cracker crumbs or seasoned salt in mine and only use 1 egg. I add about one lid full of dry parsley flakes and just a dash of onion powder. Instead of the crackers crumbs and cornmeal, I add just enough self-rising flour to dry the mixture enough to form the patties. My mom (when she was alive) loved these with just pancake syrup and hot biscuits. My husband and I usually have it with blackeye peas, cornbread and home fries about twice a month.

I use the salmon (I pick out the skin, break up the bones,) 1 egg per can of salmon, minced onion,a little salt and pepper. Form patties, fry in hot oil in my black frying pan, Love them with: Large Lima Beans & biscuit OR Southern Cane Syrup & biscuit. Wonderful!!

DeleteThere are many ways to make a salmon patty and I think I have heard just about every one...lol. This is my recipe and the way I have made them for years and while it might not be the way you make them, it is the way we do and the way we like them. I respect that others might have different recipes though.

ReplyDeleteTry it with fried potatoes and onions and cornmeal gravy. Make a regular white gravy after frying the patties. Crumble 1 patty for later. Add a handful of cornmeal to white gravy and simmer until thickened and no longer gritty. Add crumbled patty and season to taste...yummy!

I still do it today, it took a few tries to get hubby to try fish & grave but when he did he loved it!! Big cast iron skillet of corn bread to eat with the meal gravy too and a dollop of butter in the middle.... lots of black pepper!!

ReplyDeleteOne of my favorites. The old family recipe I use is almost identical to the one provided. There are a few minor additions. We always used a little diced onion in the mixture. In addition, when I got older and started making them I began using a pinch of Old Bay Seasoning and I fry them in Olive Oil. My mom and grandmother both agreed the flavor was improved by the Old Bay and the olive oil was a great light alternative to a heavier oil. People say you can't fry using olive oil, but it's all I ever use!!!

ReplyDeleteI grew up eating salmon patties. We always used flour. I like the idea of cracker crumbs. I always would put ketchup on mine and have peas with them. I also liked the bones as they are soft. I used to eat salmon straight out of the can.. I love it.

DeleteI grew up eating the Salmon Patties my Ma-Maw made. I'm not sure of her exact recipe but I know she added a little dill weed to hers as I do mine now. Love the flavor! I've learned that if you put the patties in the fridge for 30+ minutes before frying they tend to hold up better.

ReplyDeleteI never dreamed there could be so many different ways to make a Salmon Patty. I make mine like yours but did I read the recipe right? Do you put the corn meal IN the mixture. I put mine together like you do but I coat my patty in the cornmeal. My husband like yours would eat them once a week. He had a twin brother and they made a game of finding the soft bones in the patties. My Mama had always taken them out. After I married Lloyd I had to start leaving the little bones for him. Family traditions. LOL
ReplyDeleteSalmon patties are one of our favorite meals, and a quick one to fix. I would always remove the bones, too. But, one day my husband said that he missed the bones not being in there, I guess it was a texture thing, or he saw me taking them out. Ever since then I've left them in, but try to chop them up so they aren't so noticeable. I just always thought that a bone shouldn't be in your food, but the salmon is pressured cooked in the can, so the bones are soft. Anyway, they're a good source of calcium so eat 'em.

ReplyDeleteSomeone asked if you can freeze the patties. I buy the large can of pink salmon and it usually makes 5 or 6 patties. My husband and I only eat one patty each. After they are cooled I put the left overs in a ziplock freezer bag and they are saved for a day when I dont have much time to cook or dont feel well. They freeze great after they are cooked. I dont reheat in the microwave though, It makes it smell for weeks. I wrap them loosely in foil and heat them in the oven. Great for a day after we have been in the Dr office all day.

Tuna, salmon and mackeral are the fish for good heart health because of their good fat. I wish I could leave the fatty skin in but I just don't! Maybe it wouldn't even be noticable.
ReplyDeleteMy family LOVES salmon patties. My "Nanny" (grandmother) taught me when I was a young girl. They are a little different than yours. We use one egg to one can of salmon, minced onion. I put my onion in my mini chopper and wa-la...takes the work out of it. I also use self rising flour as a binder instead of cornmeal. Salt and pepper then fry in oil. YUM YUM. Just had them the other night with lima beans seasoned with smoked neck bone and got to have rice with those beans.

ReplyDeleteWe love salmon patties. I was taught to add finely chopped onion, bell pepper and celery after you sautee them. I also use Tuna or Mackrel when i cant afford Salmon. Taste the same to my family. They like to make sandwiches with cheese and tarter sauce on what ever bread we have handy at the time. Beats the fire out of a Fillet Fish sandwich! ReplyDeleteActually I appreciate the other variations to recipes that are offered. Some people may not like it in one way, but may try other variations. I have made salmon patties for thirty+ yrs and grew up on them. But, I do not drain the liquid off (for more flavor) and no cracker crumbs and only one egg. A little cornmeal and flour works just fine. I serve mine with homemade biscuits, sawmill gravy and eggs on a cold winter night or for breakfast.....just a Birmingham, AL girl's variation!

The only things that I changed was that I added a quarter of a large onion, used gluten free bread crumbs, and I put seasoned salt in instead of regular salt and lemon pepper seasoning instead of pepper. ReplyDeleteLove salmon patties. I make mine a lot like yours but I add a little mayo to my mixture. I also make a salmon loaf that is really good. The recipe is much like the recipe for the patties but you bake it in a loaf pan. Any way it's all good.

ReplyDeleteWe always called them salmon croquettes. My mother was not known for her cooking and she would often put minimal effort into it. To her it was just getting something on the table so I never watched to learn how she made them. I honestly think it was just salmon and flour. My family loves salmon patties and I have tried every recipe I have ever found. We love making salmon burgers with the leftovers.

DeleteI've been eating "samon" patties all my life. They are on my list of comfort foods. My mother always made candied sweet taters when she made salmon patties and to this day I have to do the same. Many years ago I made the patties one evening. THEN I discovered I had no sweet taters. The entire time I was eating supper I was thinking "it would be better with sweet taters". Add hot biscuits and this is a meal fit for royalty. Sliced cold fresh tomatoes are also good to go along with it. One of my simple pleasures is to take a hot biscuit, butter it, put a hot salmon patty and cold slice of tomato on it and eat it that way. (side note: hot buttered biscuit with cold tomato slice is also good). Been a while since I've had salmon patties and reading all the comments has given me a craving for them.

ReplyDeleteThe sauce that was used on the old recipes from the 50's and 60"s was a hollandaise sauce. Google offers several hollandaise sauce recipes.

I have come across a few comments however that WERE indeed rude. But more times than not, it makes the blog more interesting. I have so enjoyed your blog! ReplyDeleteMy Mom crumbled leftover biscuits into them, but I also use crackers. Always had to have mashed potatoes and creamed green peas with them. Living in AK for 15 yrs, we canned our own salmon. I thought it would be a real treat to take "fresh salmon" back to relatives in KY. Momma made the patties, and later proclaimed she would rather have the store bought kind, lol.

1 16 oz Salmon
1 egg
2 tbs mayoniase
1/4 c seafood breader
1/4 tea mustard
onion power to taste
Clean salmon of all bones. then mix all ingredients.
Fry using olive oil.
Love them my momma's recipe is almost the same except you also put in onions I still use her recipe my family loves them my favorite way to eat them is on bread as a sandwich.

ReplyDeleteI make them with cornmeal, egg, lots of black pepper, salt,and buttermilk. I take the skin out of the salmon and bones. I flake the salmon and add cornmeal , then egg, and seasoning, and buttermilk. Fry in tablespoonfuls in hot oil till golden brown and drain on paper towels. They are crispy and delicious.

While I make mine like yours for the most part, I do adds lots of onion, just my preference but by no means would I criticize your way or your preference!!! Lets all just enjoy however we like it!!!
ReplyDeleteExcept for the cornmeal, this is how my mom makes it. When my girls come to visit, we always have at least one meal with salmon patties and a side of spinach. They both get splashed with apple cider vinegar.

ReplyDeleteI have enjoyed reading all the different ways of fixing the Salmon Cakes. My Granny used to use a little bit of left over cornbread crumbled up in the mixture. We always use cornmeal to coat any fish we fry. I just think it gives it the best flavor. When I make them, I do like to add celery, onion and green pepper. Everyone loves these, because they bring back sweet memories. Thank you so much for giving us your recipe.

Mom made them with flour, egg, dash of milk & fried in oil. I love the idea of adding minced green onions, dill, garlic powder & frying in olive oil. Sides will be fried potatoes, Hollindaze sauce & a spinach salad. Thanks for all the great ideas. I would never have made them before reading this & I have been away from home for 55 years!I love reading other people's ideas & variations of recipes. How is tomato gravy made?

ReplyDeleteI don't take most folk's constructive remarks personally and don't mind them really. However, I do sometimes wonder why they are looking at a recipe for something they seem to think they already know the only tried and true way to prepare ...lol. I can always learn new things, especially about cooking, because no one knows it all and I am open to trying new things. I do test all recipes before I post them and I am sure they turn out the way you all see them in the pictures if the directions are followed and correct ingredients are used. I cannot say that about all recipes posted on the internet, because I have tried some that I am almost sure were not tested.

Someone posted that it was rude to offer up a different version, but fortunately this thread is so long, I only read polite suggestions. Some call them Salmon Patties, I grew up knowing them as Salmon Croquettes. I'm serving them tonight with mac n cheese (proper mac n cheese, baked in the oven...left over from last night's dinner) and stewed tomatoes (baked, sweet Southern style, of course!). I'm out of saltines, so it looks like panko will do the trick. I like a wee bit of grated onion in my mix as well. Gonna try something a little different this time and dip them in an egg wash and roll them in extra crumbs. I'm a sucker for crunchy! Thanks for all the wonderful recipes!

ReplyDeleteI LOVE these! They're just like when i was a kid! We used to eat them with applesauce and green beans for sides. We would dip the salmon patties in the applesauce and i was delicious then and still is now. Seeing your recipe inspired to introduce this to my own husband and 2 kids. The hubby loves them....the kids still have yet to be won over but thats typical!
ReplyDeleteI also crush the bones for the calcium content. I buy the frozen seasoning mix; onions, peppers etc., and mix with the salmon. Adds good flavor.

ReplyDeleteSPICY TEX-MEX SALMON CAKES
2 cans or packages of salmon, drained and flaked
2 packages Mexican Style cornbread mix
2 eggs, beaten (or 1 whole egg + 1 egg white)
¼ cup each: onion, bell pepper, celery, cilantro
½ cup fat free sour cream or yogurt
Combine salmon, cornbread mix, vegetables and sour cream and egg in large bowl. Form 8 large salmon cakes.
Heat a non-stick skillet on medium-high heat. Add olive oil and fry cakes
I've also made this with canned Mackerel when Salmon was too expensive. Taste great with both!!
ReplyDeleteI grew up eating salmon patties. I make them ever so often for my family. I do like to add the chopped onion to mine. I had five sisters and five brothers so it was a good cheap meal for folks who had to watch their budget.
