Here is what you will need:
1 can cream corn, 1 can niblets corn, 1 Jiffy cornbread mix, 8 oz sour cream, 1/2 stick butter, 1 egg, 2 Tbs. sugar, and 2 cups cheddar cheese
Melt butter, add Jiffy cornbread mix, egg, sour cream, sugar and the corn. Drain the can of niblets corn. Mix well until all of the ingredients are incorporated.
Spray a 2 quart casserole dish with cooking spray. Be sure to not skip this step, because this will stick. Pour it in the dish and bake at 350 degrees for 45 minutes. Sprinkle the 2 cups cheese over the top and return to oven for about 10 minutes or until cheese is melted and just beginning to brown.

2 cups shredded cheddar cheese

ReplyDeleteI make this. I drain my nibblet corn. Do you drain yours? Just wondering how it turns out if you don't. I love this stuff! I make it for bbq's all summer, and there is never a drop left! And it is a must for Easter Sunday!

ReplyDeleteThis is not traditional 'corn pudding' which is why I call it 'southern corn pudding'...lol. You know we have to have cornbread and cheese in everything. :)
ReplyDeleteYou do drain the niblets corn. It says that in the directions of the recipe. You can actually also use a couple of cups of frozen corn.

DeleteI am a celiac, so can't have the cream corn and I can substitute normal cornbread for my kind. Can I just omit the cream corn and double up with corn?

ReplyDeleteYou can prepare it the night before, just don't bake until you get ready to serve. Take it out of the fridge 30 minutes before baking.

ReplyDeleteYou can use all niblets corn instead of the creamed corn, it just changes the texture a bit but it's still good.

ReplyDeleteJocelyn, you might double the recipe for that many people if you think they will all eat it. We usually have so many sides they all eat a little of everything, but if they all like corn doubling it would best.

DeleteI make something like tis but instead of cornbread mix I used crushed crackers. It is not quite as dense but I want mine moist and dense. Is this just as moist do you think?

ReplyDeleteI always put frozen corn kernels in the muffin mix, and sometimes mix in shredded cheddar cheese. This recipe sounds yummier! Is it eaten like corn bread, or with a fork of spoon like a casserole? I'm guessing it comes out quite moist?

ReplyDeleteWe make this all the time but to jazz it up we use queso blanco instead of cheddar. It spices it up nicely.
My gr'mother made Corn pudding for my Dad as a little boy in the 30's & 40's, but used finely crushed soda crackers. Us 8 kids still fix it, according to Gr'ma's recipe.

She would always make an extra one and give it to my Mother, for me, because she knew how much I loved it. Sidenote: I always thought she was rich, because she had toilet tissue in the outhouse, and we used catalogue pages, lol. Yes, I am old (66 yrs) and grew up in KY.
