White Chocolate Caramel Banana Pudding and other Best Dishes First

I have wanted to start a food blog for over a year now, but I just never could decide to really sit down and do it.  The reason the idea even came to me was because people were always asking me for recipes that me, my mother or others in my family made.  I come from a big family of wonderful southern cooks.  However, I  am terrible about putting things on paper when it comes to recipes, because I rarely really use one for the foods that people always ask about.  They are just old family favorites that might have started with a recipe years ago and with tweaks have become what they are now.  Of course, for something new, mildly exotic, or complicated I will use a recipe the first time.

I decided that starting out, I would feature some of my boy's favorites, by that I mean my son, his friends, several nephews and my husband and father. I decided to start with these, because they are hardy, fairly easy and feed big eaters on a budget and all of the girls love them too.

 So, I told my son to send me a list of their top 5 or 6 dishes to get us started.  He got back to me fairly quickly and wanted to know when I would start cooking...lol.  He seems excited about this blog and hopes it requires lots of extra food for him.



White Chocolate Caramel Banana Pudding 


Here is what you are gonna need:


Bananas, white chocolate instant pudding mix, whipped cream, cream cheese, shortbread cookies (I used girl scout cookies), sweetened condensed milk, milk and a bar of white chocolate...which I forgot to put in the picture...sorry I am new to this.



Start by making your caramel.  Take two cans of sweetened condensed milk, remove the outside labels and place in a pan deep enough to cover them with water.  Bring the water to a low boil and boil for 3 hours.  Make sure the water stays over the cans the entire time.  You will need to add water frequently.  DO NOT let the pan boil dry.  If you do the cans could explode and that won't be good.  You can also place the cans in a foil lined crockpot, cover with water, place lid on and cook on low for about 6 hours or overnight.  With both procedures, use tongs to place hot cans in a cool water bath to cool them.  When cool you can open them to the most delicious thing you will ever taste.



Mix milk and pudding mix in one bowl until it starts to set up slightly, then mix 1 can sweetened condensed milk and the block of softened cream cheese.  Once blended well beat the two together until thoroughly combined.  Next fold in 1/2 of the whipped cream.  Save the rest for the top.




Now you can start layering.  Begin with cookies, next pudding mix, then slice a couple of bananas over that and the 1 can of the milk.  Start another layer of cookies, pudding mix bananas, and caramel.  Last layer do the last two bananas, and layer of cookies. 



Finish it off with the whipped topping you reserved and white chocolate curls or shavings from the bar of white chocolate.  



Ta-dah!  



Ingredients

5 -6 bananas
3 cans sweetened condensed milk
1 box Trefoils Girl Scout cookies or any good shortbread cookie
2 cups milk
5 oz. box instant white chocolate pudding mix
1 8oz. block cream cheese (you can use lite, but I wouldn't use fat free)
1 12 oz container whipped cream
1 bar of good white chocolate for your shavings or curls

  10. Sounds good but must have calories enough for a week, with all that milk, fat and sugar. For those who are diabetic, like me, you can make a not as good but good one with fat free milk,and sugar free pudding, sugar free vanilla wafers. Use condensed milk, but skim, makes it taste richer. Extra vanilla flavoring adds a lot to taste. Cream cheese is not needed, but if you want it, fat free tastes just as good. There is also a sugar free caramel syrup by Smuckers that is very tasty.

  13. Why couldn't you just go the the Mexican food section of the store and get 2 cans of the dulce de leche which is just canned caramel?

  14. I have tried the canned dulce de leche and for some recipes it works ok, but it just doesn't taste as good as making it from the condensed milk. It's a little stiffer and not as creamy.

  17. What a hit!! The only thing I did different was 2 small pkg of the white chocolate pudding mix and 3 cups of milk (didn't find the large pudding mix pkgs). I have never been a fan of banana pudding because I don't like the texture of the bananas altho I love the flavor. I sliced the bananas fairly thin and that seemed to resolve that problem. It has already been requested that I make this for Christmas dinner!

  21. will try this one, First layer--I use vanilla waffers- Secpond layer - 2 pkgs small of cream cheese pudding mixed ( or white choc would work or even banana) into a 1/2 gallon of blue bell french vanilla ice cream mostly softened. Third layer Banana slices, Fourth Layer Cool Whip---soooooo goood.

  25. Question, On the amount of white chocolate, are you talking about a candy bar size bar or a square of white chocolate. I'm assuming a candy bar size, just want to be sure cause this sounds amazing!

  27. I'm a little confused...Do you use 2 cups of milk and a can of sweetened condensed milk in 1-5oz box of pudding mix....and what size can?

  28. To make the filling you use the pudding mix, two cups of milk and 1 can of the condensed milk. The other cans of condensed milk are to make the caramel. Most condensed milk comes in 14 oz. cans. Eagle Brand is the most available, but there are other brands that are actually less expensive and are good.

  30. Attempting to make this with ice cream caramel topping instead of the caramelized sweetened condensed milk would be the same as using lemon jello to Make a lemon meringue pie!

  37. Cathy, I have "Shared" many of the recipe's you have posted through my timeline. Great comments! We would like to know if you have or would consider putting these recipe's in a cook book. Would gladly pay for one. Trying to copy and then keep up with them is time consuming and some people wish they were all in one book.   45. This looks FANTASTIC!!! The question is do you use individual caramel pieces and add it into the cooked milk?? Will it melt like that since we have to put the milk into a cool water bath?? That part wasn't finished so, I'm a bit confused!!

  46. The canned evaporated milk turns to caramel. That is what makes the caramel once it is boil for the time given.

  47. Kathy thank you for this recipe. I have never made caramel this way so, great trick. There are many variations that can be used whenever making Banana Pudding and most them are based upon whatever version we grew up on.
    I am always happy to get a new version of a recipe that I can try and actually enjoy. I recently tried a version that used shortbread cookies and it was pretty good but, I cannot wait to give yours a try.

    I usually make my caramel the old fashioned way, thank you for the great tip on making the caramel.
    There are many different versions to making Banana Pudding. I think most are passed down through families.
    I have never had one that was made with caramel so, I cannot wait to try this one!
